The Meal

The Meal was written for the Delta Sax Quartet. The piece consists of eight short movements, each one based around a course of a meal. A number of different styles were used to emulate the food.
Cocktails
Ask the barman for any cocktail you can imagine, and he can make it for you.
Entrée
Four taste sensations:
- A tiger prawn in filo pastry, served with with a hot chilli sauce
- Smoked duck pate on a triangle of toast
- One fresh oyster with lemon
- Feather steak with horseradish purée
Fish
A light, smoked mackerel pate, served with fresh bread.
Salad
Crisp Batavia lettuce, tomatoes and beetroot covered with a French dressing and served with fresh bread.
Main
Steak and kidney pudding, with boiled potatoes and seasonal vegetables.
Dessert
A cocktail of layers of chocolate mouse, raspberry coulis and whipped cream over a biscuit base, and served with chocolate curls.
Cheese and Biscuits
A selection of European cheeses, served with savoury biscuits, celery and grapes. French Camembert, English Stilton, Spanish Manchego, Swiss Appenzeller and Dutch Gouda.
